Ingredients:
- 2 large Brinjals or Egg Plants
- 3 nos. dried Red Chillies
- 1 tbsp Cumin seeds
- 1 tbsp mustard seeds
- 1 tbsp turmeric powder
- 1 tbsp garam masala
- 1 tbsp coriander powder
- 1 finely chopped onion
- 1 diced tomato
- Salt- as per taste
- Oil- as per taste
- Put the brinjals directly on cooking burner and roast till it gets completely roasted and tender
- remove it from the burner and cool it
- Peel the burned external layer and Mash the Pulp thoroughly
- Heat the oil in a Pan and add Cumin seeds, Dried Red Chillies and Mustard seeds and let them Splutter
- Add the diced Onions and fry till it turns brown
- Add the diced tomatoes and all the masalas
- Add salt and fry for 2 mins and add the mashed pulp of brinjal in it
- Stir Fry till the pulp is thoroughly mixed with the spices
