Egg Fried Rice

A very tasty and viable alternative when you want a change of taste from the routine daal-roti. I wrote viable because its very healthy and can be used both as snack or a wholesome meal.



Serves: 2
Preparation Time: 10 mins
Cooking time: 10 mins

Ingredients:
  • 2 Eggs
  • 1.5 Cup Rice
  • 1 finely chopped Carrot
  • 1 diced Capsicum (Green Bell or Shimla Mirch)
  • 1 tbsp Pepper Powder
  • Oil- very minimal (about 2 tbsp)
  • Salt- as per taste
Method :
  • Boil the rice in a Pan or Pressure Cook it till 1 whistle. Keep it aside
  • Whip the eggs properly in a bowl. Add a Pinch of Black Pepper Powder and Salt in it
  • Put some Oil in a Pan and cook an omelette. Set it aside
  • Wipe the Pan with a Paper Napkin and now heat some more oil
  • Add the diced carrots and capsicum
  • Add the Pepper Powder and Salt and Toss the vegetables in the Pan for 2 minutes
  • Add the cooked rice and mix properly. Take the Pan off flame
  • Roll the omelette on a cutting board and cut it into pieces
  • Sprinkle the cut pieces on the rice
Serve Hot :)
